Time for another dram!
A Mexican Corn Whisky with an interesting aroma.
A bit about
Abasolo Distillery uses 100% non-GMO, Cacahuazintle (pronounced (kaka- wha - sint - lay) ancestral corn which is processed using a 4000-year-old cooking technique called nixtamalization (the corn is soaked and cooked in an alkaline solution, washed and hulled).
The Abasolo is Copper Pot distilled, has a very light golden colour and 43% ABV.
Time to try it!
Nose: Sweet, a bit herbal and delicately floral, with butter popcorn
Taste: More corn, with caramel and the smallest hint of baked apple,
Finish: Medium (long-ish), with a hint of vanilla and pepperiness/spice towards the end.
Overall, for me, it seems to be a light-bodied whisky with delicate aromas and no trace of peat.
It does need to sit in the glass for a couple of minutes before you enjoy it, as it does open up quite a bit after that.
Pros and Cons
You can immediately tell it is a corn whisky the second you pour it (not in a bad way, as the flavours are very delicate)
Very different from most single malts I'm used to, in style, flavour and even mouthfeel.
For me, the Abasolo is easy to drink and most enjoyable neat. Adding a tiny amount of water is fine (1-2 drops), but anything more than that seems to dilute the flavours too much.
If you decide to use it in cocktails, it is quite delicious in a highball with a couple of slices of lime or lemon added.

In conclusion
I prefer this one neat, as adding anything to it seems to dilute it too much for my taste.
