An easy recipe for a super delicious cake, packed with flavour.
This recipe combines slightly tart apples, sweet overripe bananas and crunchy peanut butter - resulting in a phenomenally delicious cake with the right amount of moisture and an incredible texture.
Apple, Banana and Peanut Butter Cake
You will need:
2 cups diced, apples (200g)
2 medium eggs
2 overripe bananas
2 cups all-purpose flour (240g)
1 cup sugar (200g)
1 tsp vanilla
100g crunchy peanut butter
50 ml vegetable oil
1 tsp baking powder (7g)
2 tbsp icing sugar and 1/2 tsp orange juice or water for drizzling
How to:
Preheat the oven to 180C/gas 4
Line two loaf tins with baking parchment
In a mixing bowl, mash the overripe bananas with a fork
Add all other ingredients apart from the apples and mix well
Add the apples and mix again slowly
Divide the mixture equally between the two loaf tins
Bake for 35-40 minutes at 180C/gas4 (insert a wooden skewer in the middle of the cake after the stated time, and if the skewer does not come out clean, bake for an extra 5 minutes, or until the skewer comes out clean)
Leave the loaves to cool down completely
In a small bowl mix the icing sugar with a teaspoon of water or lemon/orange juice and mix until you have a smooth paste
Drizzle the icing on top of the cooled down loaves and leave it to dry
When the icing is completely dried, slice and enjoy!
The cake itself is very balanced when it comes to sweetness, so adding the icing won't make it overly sweet (plus it looks great) but you can omit the icing if you're not a fan of it in general.
You can use frozen overripe bananas if you have them available. I usually have some in the freezer because they're super handy to have for both this recipe and Banana Bread.
You can use a round or square/rectangular cake tin (10'x12') instead of the loaf tins if you don't have the latter available.
This beautiful cake lasts for about 3 to 4 days at room temperature in an air-tight container.
This cake is dairy-free and can be made gluten-free as well if swapping the plain flour for the gluten-free version.
