A beautiful and delicious cake perfect for the colder times of the year

If you want the apples to be soft, super cinnamony and sweet, melt the butter then add the sugar, cinnamon and apples and simmer for 1-2 minutes. Let the apples cool down then arrange them at the bottom of the cake tin.
Alternatively, grease the bottom of the tin with the butter, sprinkle the sugar and cinnamon, then arrange the raw apples on top of that.
Apple Upside-Down Cake with Pumpkin and Walnuts
You will need:
For the topping:
3 large apples, peeled, cored and sliced
20g butter/dairy-free spread
20g light brown sugar/caster sugar
1/2 tsp cinnamon
For the batter:
100g butter or dairy-free spread
110g light brown sugar/caster sugar
2 large eggs
1ts vanilla flavouring/extract
150g plain flour
1ts baking powder
150g pumpkin puree
50g roughly chopped walnuts
1 tsp Bart winter spice (or 1/2 tsp cinnamon and a pinch of nutmeg)
How to:
Pre-heat the oven to 180C/160 fan/gas mark 4
Grease a 9-inch/23 cm cake tin or line it with baking parchment
Sprinkle the 20g of sugar and the cinnamon on the bottom of the tin.
Arrange the apple slices on top of the sugar, making sure to fully cover the base.
Mix all the ingredients for the cake and pour the batter on top of the apples.
Bake at 180C for 30-35 min (until golden brown)
Do the toothpick test (insert a toothpick in the centre of the cake, if the toothpick comes out clean, your cake is ready)
Remove the cake from the tin and leave it to cool with the apple side facing up (remove the sides of the cake tin, then put a plate or cooling rack on top of the cake and quickly turn it over)
Slice and Enjoy!
Feel free to add a few raisins/sultanas or chopped dates to the mix
If you need this recipe to be nut-free, replace the walnuts with chopped dates
