With a rich chocolatey taste, these cookies have a perfect balance of crunchy and chewy.
This super easy recipe makes 20 delicious cookies.
Chocolate Oat Cookies
You will need:
2 eggs
2 cups oats (200g)
1 cup plain white flour (150g)
30g cocoa powder
100 g dairy-free butter/butter
120g caster sugar
100g chopped dark chocolate
1 tsp baking powder
1 tsp vanilla extract
How to:
Preheat the oven to 180C/gas4
Line a tray with baking parchment.
In a mixing bowl add the eggs, butter, sugar and vanilla extract and mix well
Add the baking powder, and cocoa powder and mix
Add the flour and oats and mix until you have a smooth batter
Scoop a spoonful of the mixture, place it on the tray and flatten it slightly with the back of the spoon (alternatively, using your hands, roll the spoonful of mixture into a ball, then flatten it if you want super round, cookies)
Bake for 15 minutes at 180C/gas 4.
Remove the cookies from the oven and leave them to completely cool down on a cooling rack

I prefer dark chocolate, but you can use milk chocolate as well
I usually make this recipe with dairy-free butter and dark chocolate, so most of the time it is a dairy-free recipe.
If you want this recipe to be gluten-free as well all you have to do is replace the plain flour with a gluten-free one and make sure the oats are gluten-free as well (sometimes they might not be suitable for coeliacs due to how they're packed)
If using a fan-assisted oven, cooking times may vary slightly, so please check how the cookies are looking after 12 minutes and adjust the time accordingly.
They last for 5-6 days at room temperature, in an airtight container.
You can add a handful of chopped almonds or walnuts, for an extra bit of flavour and texture.
