When I think about Cinnamon Apple Cake, this is my go-to recipe. It's super easy to make and just so delicious!
This Super Easy Recipe can be made gluten-free and dairy-free by swapping the milk and all-purpose flour with the same amount of their alternatives.
You will need:
For the batter:
3 large eggs
100 ml milk /dairy-free alternative
90 ml vegetable oil
200g all-purpose flour
50g sugar
1 tsp baking powder
a pinch of salt
For the apple filling
10 medium apples, cored and grated
1 tsp cinnamon powder
70g white caster sugar
Extra - a teaspoon or two of icing sugar for dusting
How to:
Start by washing, coring and grating the apples
Place the grated apples in a saucepan then add the sugar and cinnamon
Simmer for 8-10 minutes then set it aside to cool down
Preheat the oven to 200C/gas 5 and line a baking tray (12'x10') with baking parchment
In a bowl, add all ingredients for the batter and mix well, making sure you have a very smooth consistency
Pour about 80% of the batter into the tray, leaving at least 6 or 7 tablespoons of the mixture to cover the apples
Using a fork, gently place the apples on top of the batter
Drizzle the rest of the batter on top of the apples, using a spatula to smoothen the surface
Bake for 25-30 min, until golden and a wooden skewer inserted into the middle of the cake comes out clean.
Remove the cake from the tray, and place it to cool on a cooling rack
Slice as desired and enjoy!
You can also add a drop or two of vanilla extract or flavouring to the batter mix if you want to.
