If you want delicious flapjacks which are ready in no time, then give this recipe a try.
This one is another simple recipe that happens to be gluten-free and dairy-free.
All steps: preparing everything, mixing the ingredients, and baking (even washing the dishes while the flapjack is baking because why not?), shouldn't take more than 30 minutes. If you happen to have overripe bananas and you're not in the mood for Banana Bread, then this super easy recipe is another tasty way to use them up.
You will need:
3 overripe bananas, mashed
3 cups of gluten-free oats (240g)
100g golden syrup
100g coconut oil
30g desiccated coconut
1tsp vanilla flavoring/extract
How to:
Gently heat the coconut oil pan, together with the golden syrup
Mash the bananas and add them to the pan
Add the oats and desiccated coconut and mix well
Pour the mixture into an oven dish (20X20cm baking tin) coated with baking parchment
Press the mixture lightly with the back of a spoon, making sure to even it out
Bake at 180C/160 fan/gas mark 4 until golden brown (about 15 minutes)
Cut it into squares/rectangles
Enjoy!
Feel free to use butter instead of coconut oil if your diet allows it.
I like the combination of banana and coconut both for flavour and texture, but you can add extra stuff such as dried apricots, raisins/sultanas, or even chocolate chips if you want to add some extra crunch.
