Homemade Crackers with Cheese and Olives Recipe
You will need:
1 cup all-purpose flour
1/2 cup grated cheese
5-6 large olives chopped
1 tsp sugar
1 tsp salt
3-4 tbsp water
5 tsp olive oil
How to:
Preheat the oven to 180C/gas 4
Mix all ingredients in a bowl
Roll the dough to 1/2 cm thickness
Using a knife or pizza cutter, cut the dough into squares
Place the squares on a tray lined with baking parchment
Bake for 8-12 min, until golden
Transfer to a cooling rack and let the cheesy crackers cool down for a few minutes.
Enjoy!
I like the crackers to be quite flaky, so I roll the dough a few times, fold it and roll it again. I do this three times, and if you have the time and patience, you can repeat the process a few extra times.
Feel free to use your preferred Cheddar/Gouda/Edam/Provolone/Fontina or anything similar.
You can use green olives, black olives, or, as I usually do, a mix of both.
Ideally, try to use virgin olive oil, but if if you don't happen to have that, sunflower or rapeseed oil will do the job.
Once they cool down completely, they can be kept in an air-tight container at room temperature, for about a week.
You can enjoy them as they are, or pair them with your favourite cream soups, dips or charcuterie boards.
