Pan-fried Parsnips with Honey and Pumpkin Seeds
A simple yet highly delicious dish with an irresistible combination of textures and flavours.
This recipe makes 2 portions. Prepping and cooking take around 20 minutes.
You will need:
500g parsnips, peeled
75g butter/vegan alternative
1/2 tsp salt
1/2 tsp rosemary
50g roasted pumpkin seeds
two teaspoons honey
How to:
Peel the parsnips and cut them in half, lengthwise (or in 4 if larger)
Heat the butter in a pan and add the parsnips
Fry on medium heat for around 10 minutes, making sure to turn them over midway through
Remove the parsnips from the pan and place them on a sheet or two of kitchen roll/towel, to remove some of the butter
Place the parsnips on the plates, sprinkle the salt and rosemary on top
Drizzle a teaspoon of honey on top of each plate
Sprinkle the pumpkin seeds on top of everything.
Enjoy!
It pairs very well with a few bits of feta cheese
Feel free to add a handful of walnuts and toasted almond flakes to this dish, for even more texture.
You can use this as a side dish or as a main dish
You can use dry or fresh rosemary or even thyme
You can substitute the honey for agave nectar
