I bake some type of crumble every week, it's cinnamon apple more often than not, but this is also one of my all-time favorites. Give it a try and tell me what you think.
You will need:
2 large peaches /1 tin (if fresh fruit isn't an option)
400g fresh /frozen pineapple /2 tins
2 cups gluten-free oats
1 cup gluten-free flour
150g dairy-free spread
¼ cup sugar
(Optional - 100 ml soy milk, see below)
How to:
If using fresh fruit, chop the peach and pineapple pieces as finely or roughly as you desire and place them in an oven dish (30X20 cm or similar).
If you're using tinned fruit, drain the fruit and keep the syrup from one of the tins.
In a bowl, mix with your fingers the oats, flour, dairy-free spread and sugar until the mixture looks like large breadcrumbs (see below).
Put the oat mixture on top of the fruit and then cover everything with the syrup or soy milk, depending on what type of fruit you choose.
Preheat the oven to 180 fan/gas 4 and bake for 30-35 minutes (or until golden brown).
Leave it to rest for at least 10 minutes.
It's delicious on its own or you can serve it with vanilla custard for even more flavour and sweetness.
This is an easy-to-make recipe. It doesn't take more than an hour to prepare everything, bake the crumble and wash dishes and if this mix of fruit isn't your thing, feel free to try blueberries and raspberries, plum or the traditional apple cinnamon mix.
