Roasted Broccoli, Cauliflower and Carrots

An easy recipe for a delicious mix of roasted vegetables.


This recipe takes around 45 minutes for both prepping and roasting.


You will need:


Roasted Broccoli, Cauliflower and Carrots

  • 400g broccoli and cauliflower florets

  • 1 large carrot

  • 3-4 tablespoons of sunflower/vegetable/olive/rapeseed oil

  • 1 tablespoon mixed herbs (fresh or dry - parsley, dill, thyme)

  • 1 teaspoon ground black pepper

  • 1 teaspoon chilli flakes/gochugaru

  • 1-2 teaspoons sea salt


How to:


Roasted Broccoli, Cauliflower and Carrots

  1. Preheat the oven to 220C/gas 7/425 F

  2. Wash and dry the cauliflower and broccoli

  3. Peel the carrot and cut it into sticks (4-5 cm)

  4. Put the veggies either in a large bowl or straight into the roasting tin

  5. Add the oil, seasoning and herbs and mix well until all vegetables are coated evenly

  6. Arrange the veggies in a single layer in the roasting tin and put it in the oven for 30 min at 220C/gas 7/425 F

  7. Remove the tray from the oven and leave it to cool down for a few minutes before serving

  8. Enjoy!

  • These delicious veggies pair very well with a portion of Roasted New Potatoes with Rosemary

  • You can pair this with mashed potatoes, meat, fish or vegan roast for your traditional Sunday meal (or any meal really).
