This is a super easy recipe for deliciously crispy oven-roasted new potatoes.
Roasted New Potatoes with Rosemary
You will need:
1 kg new potatoes, (preferably Jersey Royal)
2 tsp salt (preferably sea salt)
1 tsp freshly ground pepper (I used rainbow pepper)
1/2 tsp chilli flakes (I prefer gochugaru)
1 tsp chopped fresh rosemary
4-5 tbsp olive oil/sunflower oil/vegetable oil
How to:
Preheat the oven to 200C/gas 6
Wash the potatoes, then put them in a pan of water
Bring the pan to a boil and parboil the potatoes for 10-12 minutes (depending on how big they are)
Drain the potatoes, leave them to dry slightly, then put them in a large bow
Add the oil, herbs and spices
Toss/mix the potatoes until they are fully coated
Put them on a roasting tray, making sure they are arranged in a single layer
Roast at 200C/gas 6 for 15-20 minutes
Turn the potatoes over and roast for another 15-20 minutes (or a few more minutes if they are bigger)
Remove the tray from the oven, and leave the potatoes to cool down for a couple of minutes before serving

I prefer Jersey Royal potatoes as they keep their shape very well and have quite a unique flavour, but for this recipe to succeed, any type of new potato will do just as well.
I prefer using a bowl to coat the potatoes with the oil and spices as it gives me enough space to make sure they are covered evenly but feel free to mix everything directly into the roasting tray if that is your usual method.
For even more flavour, add a few crushed garlic cloves to the mix, or garlic powder, either when you combine everything or sprinkled on top of the potatoes before you place the tray in the oven.
For new potatoes, I prefer to use only rosemary, but you can also add thyme, parsley, dill or oregano
I normally use freshly ground rainbow pepper, but, don't worry, black pepper will be just as good.
You can use paprika/smoked paprika instead of chilli flakes or as an addition
These delicious little potatoes will last in the fridge, in an air-tight container for up to three days (but I sincerely doubt they will survive for longer than a few minutes).
