Deviled eggs or stuffed eggs are a super delicious dish which can be served as an appetiser, side dish or even as a lunch main dish. They're super easy to make and even easier to make disappear.
You will need:
9 eggs, boiled
60g mayo
120g vegetable pâté
1 tsp chopped parsley, fresh or dry
1 tsp chopped dill, fresh or dry
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp chilli flakes
parsley leaves or rocket/arugula for garnishing
How to:
Hard boil the eggs (about 10-12 minutes) and let them cool down completely
Slice each egg in half, lengthwise
Place all the egg yolks in a bowl and mash them with a fork
Add the rest of the ingredients and mix well
Fill each half of the egg white with a heaped teaspoon of mixture and place them on a plate/tray
Once all the halves are filled, sprinkle a bit of ground pepper and chilli flakes on top
Place one parsley leaf or rocket leaf on each egg
Enjoy straight away or refrigerate
You can use chicken or duck liver pâté instead of the vegetable one
You can add to the mixture, or garnish with a few chopped olives
For an extra bit of kick, you can add a teaspoon of Dijon mustard to the mixture
You can use a piping bag for the mixture instead of spooning it in if you want these deviled eggs to look fabulous, but I honestly can't be bothered with that if I make them for a random Tuesday lunch.
