A super easy recipe for a delicious, light and flavourful cake.
You will need:
Strawberry and Coconut Cake
300 g strawberries
2 eggs
1 cup/200g white caster sugar
1 1/2 cups/ 180g white flour
120 ml vegetable/sunflower oil
80g butter/dairy-free spread
1 tsp vanilla extract/flavouring
60 g desiccated coconut
10g baking powder
10g cocoa powder
How to:
Pre-heat the oven to 180C/ gas 4
Line the bottom of a 9inch cake tin with baking paper and use a teaspoon of butter/dairy-free spread to butter the edges
Slice 7-8 large strawberries (100 g) into thin slices and cut the remaining ones into small cubes
In a large bowl mix the butter and sugar
Add the eggs, vanilla extract, and desiccated coconut
Add the flour and baking powder and mix well
Add the chopped strawberries and mix gently
Pour most of the batter into the cake tin, apart from 2/3 tablespoons of the mix
Mix the leftover batter with the cocoa powder and two tablespoons of water
Slowly pour the batter with cocoa on top of the other one, either trying to create a swirl, starting from the centre, or zig-zags
Arrange the strawberry slices on top of the batter
Bake for 45 minutes at 170 C fan assisted/ 190 C/ gas 5/ 375°F (or until a toothpick/wooden skewer inserted in the middle of the cake comes out clean)
Leave the cake to cool down in the tin for 5-10 minutes
Transfer the cake to a cooling rack and leave it to cool down completely
Slice, serve and enjoy!
You can sprinkle some icing sugar on top before serving, but it's super delicious with or without it.
If you prefer this cake without cocoa powder, you can just omit that step and pour all the batter into the cake tin
You can enjoy it as it is, serve it with a scoop of vanilla ice cream or whipped cream
Kept in an air-tight container at room temperature or in the fridge, this beautiful cake will last for 2-3 days.
This cake can be made dairy-free as well as gluten-free by using dairy-free butter/spread and gluten-free flour and the resulting cake will be just as fluffy and delicious
