
Literally 3 ingredients and about half an hour spent in the kitchen.
I have a constant urge to bake but I'm not always willing to spend endless hours in the kitchen just so I can try a different recipe. I do have other things to do in life as I'm sure you all do and sometimes all I want is a little homemade cookie that goes well with tea or coffee.

You will need:
180 grams peanut butter
145 grams caster sugar
1 egg
That's it. These cookies don't contain flour and I love that about them. They are obviously gluten and dairy free so they get from me an extra point just for that.
How to:
Heat the oven to 180C/ gas 4.
Mix your numerous ingredients in a bowl
Take half of a tablespoon of batter and shape it into a little ball; place it on your baking tray of choice lined with baking parchment (you will probably need two trays for this amount of mixture) and gently press it down with a fork.
Repeat until you're out of batter (or patience, whichever comes first) and pop them in the oven for about 10-12 minutes. They need to be darker (golden) on the edges and lighter in the middle.
Leave them to rest for a minute or two on the tray ( they are still quite crumbly but will get harder as they get cooler) and then transfer them to a cooling rack.
Crunchy on the outside and chewy in the middle, they are a bit on the sweet side but they're not over-the-top sugary. The problem with them is that it's a bit hard to stop yourself from having another one and another one and just one more and maybe just this last one until they disappear

I would love to tell you for how many days these cookies last kept in an air-tight container, but in my house, they last for about an hour maximum. A few similar recipes I've tried before suggested they keep well for about 3 days. I'll have to give you the same advice as I don't honestly know.
I would put them in the jar/container as soon as they have cooled down as they might get too crunchy if left outside for too long.

I bake these cookies in small batches because they are highly addictive, but if you need to bake more cookies than this recipe offers (15-20 pieces), all you have to do is double or triple the amount of ingredients and the results will be the same.
