A simple recipe for Swede and Hummus Fritters. They can be fried or baked and they pair fantastically well with a variety of dips. This recipe makes 12 reasonably-sized fritters.
Swede is not something I cook with that often but sometimes I buy vegetable boxes which contain various types of leafy greens, marrows and root vegetables, and more often than not, they contain swede as well.
Whenever I look for recipes with Swede, the most common ones are soup, mash and roasts. Throughout the years I have tried quite a few of them and so far I haven't found one I can truly say I want to make over and over again. I wanted something a bit different, so, as usual, I ended up making my own. Here's how it goes:
Swede and Hummus Fritters Recipe
You will need:
250 g swede (peeled, grated and parboiled)
200 g hummus
60 g flour
80 g breadcrumbs
2 eggs
1 tsp salt
1 tsp black pepper
1 green onion chopped
2 garlic cloves, crushed and chopped finely
optional 1 tsp smoked paprika and 1/2 tsp ground cumin
How to:
Peel and grate the swede,
Put the grated swede in a saucepan, cover with water and bring to boil
Simmer for 1-2 minutes then drain
Put the swede in a bowl then add all other ingredients and mix well
Scoop a heaped tablespoon of the mixture and form it into a small patty.
Option 1. Place the fritters on a baking tray lined with baking parchment and bake for 20 minutes (or until golden), then leave them to cool for a few minutes on a cooling rack before serving.
Option 2. Deep fry them in vegetable oil for about 4 minutes on each side (until golden brown)
Fritters, as the name implies, are usually deep-fried. I prefer them fried, but if you're trying to avoid deep-fried foods for whatever reason, the baked version is just as tasty, so no need to miss out on these delicious fritters.
You can enjoy these delicious Swede and Hummus Fritters as they are, or you pair them with garlic mayo/garlic dip, chilly sauce, burger sauce, soy sauce, or any other dip of your choice.
I prefer them with a garlic dip whether they are fried or baked, but some members of my household really loved them with hot salsa, so my suggestion would be to try them with your favourite dip.
