Yellow Beans with Tomato, Garlic and Herbs
A super simple and delicious dish, best served with crusty bread or toasted sourdough.
Prepping and cooking take around 20-25 minutes.
This recipe makes two medium portions.
You will need:
300 g yellow beans - fresh or preserved
1 medium carrot chopped
1/4 pepper, chopped
1 green onion chopped
1 medium onion chopped
2 tbsp chopped tomatoes in sauce
2 cloves of garlic, crushed and chopped
1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
parsley and dill to taste

How to:
Heat the olive oil in a pan
Add the onion, carrots, garlic, peppers and green onion and cook for 2-3 minutes on medium heat
Add the tomato sauce and 1/2 cup of water and simmer on low heat for 5-6 minutes, or until the carrots are tender
Add the yellow beans and another 1/2 cup of water and simmer for another 4-5 minutes
Add the parsley and dill and remove from the stove
Plate and enjoy!
I used preserved yellow beans but feel free to use fresh beans, just make sure to wash them, trim the ends and snap them in two or three pieces.
You can use frozen or fresh peppers, carrots, onions and spring onions, basically whatever you have available.
You can use only dill or only parsley if you have a preference or dislike for one or the other
